Tasteful Tuesday – Clean Eating Cashew Chicken

My blessings LOVE to cook and bake.  Last night I had the pleasure of being a “sous chef” for my little man.  We made stir fry Cashew Chicken and everyone thought it was delicious (that rarely happens in my home).  My little man was smiling from ear to ear!

We thought we’d share our recipe with you.  To make this recipe “clean” or all natural, you can simply purchase all natural, organic ingredients.  One ingredient in stir fry that I don’t really care for using is soy sauce.  It is filled with sodium and I really don’t like the salty flavor.  However, we purchased Koyo Foods Organic Tamari Soy Sauce wheat free.  It was amazingly delicious and not at all salty!

Cashew Chicken (6 servings)
1 lb cubed chicken
1 tbsp olive oil
2 cups mixed veggies of your choice (we used onion, zucchini, green beans, carrots, peas, and corn–I know corn isn’t typically in Asian cuisine but I have picky eaters)
1/4 cup Tamari Soy Sauce
1 cup cooked brown rice
1/2 c cashews

Allow rice to cook while you prepare the remainder of the meal.  Heat oil in wok or skillet, brown chicken and set aside.  Saute onions and softer veggies and set aside (zucchini may need to be done separately as it doesn’t take as long as carrots).
Saute remaining veggies.
Add chicken and soy sauce to the veggies in the skillet.  Add rice and cashews and stir to coat with sauce.  Allow to cook on low for just a few minutes while you continue to stir.  (You’ll notice I didn’t add the zucchini until I plated mine and one of my daughters because of some of the picky eaters.)  ENJOY!
My little man is a little picky when it comes to veggies and rice, but he really enjoyed being the head chef for the night.  Allowing your children to help cook dinner, can help solve some of the picky eating habits.

He tasted his masterpiece and determined he really liked rice and veggies in this particular dish.  I’m so proud of his adventurous side and his servant heart.  Not only did he cook, but he also helped clean the kitchen!  I am so blessed!!
