Tasteful Tuesday – No Oil Hummus Recipe

A few years ago I began my quest for clean eating, a healthier lifestyle for me and my family, one where we try to eat whole foods which God created instead of chemically processed foods.  I have to say I feel so much better when I eat clean.

I’m not a picky eater, but I never thought I’d like hummus.  I don’t know why really, except that the name doesn’t sound all that appetizing, and some pictures don’t either.  However, when I tried it I was pleasantly surprised.  I made my sweet hubby try it, but unfortunately he didn’t care for it.  My children are major dippers, and a few of my children enjoy hummus. 
Unfortunately, I inherited some heart rhythm issues.  Believe it or not, certain things I eat can trigger these issues.  When I eat hummus sometimes my pulse rate increases.  The only thing I can attribute it to is the sodium bicarbonate that is in many hummus brands sold in stores.  When it happens, it is mild and tolerable.  However, it makes me very uncomfortable.  I also don’t want to put anything into my body that is going to cause the slightest bit of harm or potentially cause my heart to go into a tachycardic or atrial fib episode.  Believe me–I’ve experienced both and they are scary and potentially fatal.

I’ve been reading The Skinny Rules: The Simple, Nonnegotiable Principles for Getting to Thin by Bob Harper.  It’s a clean eating approach to a healthy lifestyle.  There is a list of simple rules to follow, many of which I had already implemented.  The rules help boost your metabolism.  He also has menu suggestions for men and women as well as loads of recipes.  I was so excited to find his no oil hummus recipe.  I made it yesterday and it is AWESOME!

Bob Harper’s No Oil Hummus Recipe

(servings: 6)

Ingredients

• 2 tablespoons freshly squeezed lemon juice

• ¼ teaspoon salt
• 1 15.5- ounce low-sodium can garbanzo beans, drained and rinsed
• ½ garlic clove, cut into a few smaller pieces
• ¼ cup low- sodium veggie broth (or water) to thin

Place all ingredients in a food processor; process until smooth.  Refrigerate in an airtight container for up to 5 days.

Nutrition Information per serving: 
97.5 calories, 4g protein, 18.7g carbs, 1g fat
